When translated from Japanese, ‘Wa Gyu’ actually means ‘Japanese Cow’, and refers to a limited selection of cattle breeds originally hailing from Japan. To be legitimately classified as Wagyu, the following four cattle breeds are taken into account: Japanese Black, Japanese Brown, Japanese Polled and Japanese Shorthorn. Japanese Black (Kuroge Washu) is the most popular breed of the list.

100% Purebred Wagyu Beef
Wagyu beef is known for it’s intense marbling and tenderness. It has a large amount of intramuscular fat, providing a great deal of flavor. Cattle is considered to be Wagyu beef as long as 50% of the lineage is Wagyu. The cow is typically bred with an angus as well. 100% purebred Wagyu beef is a pedigree bred cattle, when there is only Wagyu cattle in the lineage.

Japanese Wagyu Beef
Kobe is a Japanese beef and is considered by many to be the best form of beef available in the world. Gourmet chefs prize Kobe beef for it’s tenderness, flavor, and amount of intramuscular fat, called marbling. Heavy marbling gives steak it’s satisfying mouth feel, and many cuts of Kobe beef are graded several categories above USDA Prime because of this. Kobe beef must originate in Kobe, Japan. Japanese Wagyu beef is of all the same characteristics as Kobe, however the origination is a nearby city in Japan.
