Choosing a Ham: Boneless or Bone-In Ham?
Hams with the bone left in tend to be more flavorful than boneless hams. Bone-in hams are also more decorative, and make for a more ceremonious presentation on special occasions. Also, you get the ham hock for soups and stews!
Lamb Domestic vs. Imported
At Strip District Meats, we carry two types of lamb. We carry both domestically raised and imported lamb. It is important to understand the difference between each type before selecting a cut for your holiday meal. Domestic lamb is raised within the United States, usually near Michigan. In the United States, we finish off our Lamb, like beef; it tends to make the meat more tender and mild in flavor. Imported lamb is raised in another country, usually Australia or New Zealand. Imported Lamb is fed a diet of grass only, thus having a stronger flavor. Domestic lamb is more expensive.
How Much Meat Should I Buy?
Estimate about 3/4 pound of bone-in ham per person and 1/2 pound of boneless ham per person. (A bone-in ham will have less meat per pound than a boneless one.)
